Hello, I'm Nick — Founder of Tallow and Shun.

 

With over 25 years of experience at the highest levels of the hospitality industry, I work with food businesses to define their direction, sharpen their operations, and bring their vision to life.

 

My background spans the full breadth of the sector — from 2 Rosette and Michelin Star restaurants to stadiums, contract catering, events, and pubs. This breadth of experience has given me a rare perspective on what it takes to build and sustain a successful food business.

 

My foundations were established through the Royal Academy of Culinary Arts Specialised Chefs scholarship, and strengthened by a BA (Hons) in Business Management — a combination that allows me to approach every challenge with both culinary excellence and commercial rigour.
