Hello, I'm Nick - the founder at Tallow and Shun.

 

After a quarter-century immersed in the high-detail world of professional kitchens, I'm leveraging my experience to help others define, refine, and launch their own successful hospitality businesses.

My career has been dedicated to mastering the art of cooking, efficiency, and exceptional service.

 

My foundations were forged at the Royal Academy of Culinary Arts Specialised Chefs scholarship, and my perspective was broadened with a BA Hons Degree in Business Management—a crucial combination that allows me to approach hospitality businesses with both a chef's creativity and a business mindset.​​

 

I've had the distinct honor of working in some of the most demanding and celebrated kitchens in the industry, which have shaped my unique approach to culinary strategy. That have range from 2 Rosettes Restaurants, Michelin Star restaurants, Stadiums, Contract Catering, Events and Pubs.​
