5 Things That Separate a Good Event Caterer from a Great One

In a crowded market, it can be difficult to tell apart a caterer who will do the job and one who will genuinely elevate your event. The food might look similar on paper. The menus might even overlap. But the experience on the day — and the impression your guests leave with — can be worlds apart.

After two decades working in professional kitchens and events, here is what we believe separates truly great catering from the merely adequate.

1. They Ask Better Questions

A good caterer asks what you want to eat. A great caterer asks who your guests are, what the occasion means to you, what atmosphere you are trying to create, and what you want people to feel when they leave. The difference is profound. When a caterer understands your event at that level, every decision — from the amuse-bouche to the petit four — is made with purpose.

2. They Understand Logistics as Well as They Understand Food

Exceptional food prepared badly — served cold, late, or chaotically — is not exceptional food. Great caterers think like event producers as well as chefs. They map out timelines, consider kitchen facilities at the venue, plan for contingencies, and communicate clearly with the rest of the event team. The best food moments at any event are the result of invisible logistics done well.

3. Their Menus Tell a Story

A menu is not just a list of dishes — it is a narrative. Great caterers build menus with intention: each course sets up the next, flavours evolve, the experience builds and then resolves. Guests may not be able to articulate why a meal felt so complete, but they will feel it. That sense of coherence comes from a chef who thinks in terms of the whole, not just the individual plate.

4. They Handle the Unexpected Without Drama

Events rarely go entirely to plan. A delivery is late. A dietary requirement comes to light on the day. The programme overruns and dinner is pushed back by 40 minutes. Great caterers absorb these moments without panic and without letting the disruption reach the guest. They have planned for contingencies, they remain calm under pressure, and they protect the experience regardless of what happens behind the scenes.

5. They Care About What Happens After the Last Bite

Great caterers are invested in the lasting impression they leave. They check in with clients after the event. They want to know what landed and what could be refined. They think about the next event before they have even been asked. This long-view mentality — caring about reputation, relationships, and continuous improvement — is what separates a vendor from a genuine partner.

At Tallow and Shun, these principles are not aspirational — they are the standard we hold ourselves to at every event. If you would like to discuss how we can bring this approach to your next occasion, we would love to hear from you at info@tallowandshun.com.
