At Tallow and Shun, we provide private chef services for dinner parties across London, Bromley and the South East. In this guide, we walk you through exactly what to expect — from the first conversation to the last course — so you know what you're getting before you book.
1. The Initial Consultation
Every private chef booking starts with a conversation. This is where we get to understand what you're looking for — the number of guests, the occasion, any dietary requirements, and the kind of dining experience you have in mind.
This isn't a quick form-fill. A good private chef will ask about the feel of the evening (relaxed and informal vs. a formal sit-down), your food preferences, any allergies or intolerances at the table, and whether you have a budget per head in mind.
The consultation is also your opportunity to ask questions — about the menu, what's included in the fee, and what you'll need to have available in your kitchen on the night.
2. Menu Planning
After the initial consultation, your chef will propose a menu tailored to your preferences. For a dinner party, this is typically a three- or four-course menu — a canapé or amuse-bouche on arrival, starter, main and dessert — though a tasting menu format is an option for more special occasions.
The menu will be designed to work practically within your kitchen space and equipment, while still delivering a genuinely memorable dining experience. You'll have the opportunity to review and adjust before anything is finalised.
What about dietary requirements?
Any experienced private chef will be fully comfortable accommodating dietary requirements — whether that's vegetarian, vegan, gluten-free, dairy-free or specific allergies. The key is to communicate these clearly at the planning stage so the menu can be designed around them from the outset, rather than adapted at the last minute.
3. Ingredient Sourcing
Once the menu is agreed, your chef takes care of all the shopping. This means sourcing the right quality ingredients for each dish — whether that's a local butcher for the meat, a fishmonger for a seafood course, or a specialist supplier for something more unusual.
Ingredient costs are typically billed separately to the chef's fee, either as an agreed per-head estimate upfront or as an itemised receipt after the event. Your chef will always discuss this with you clearly before confirming the booking.
4. The Day of the Dinner Party
Your chef will typically arrive two to three hours before the meal is due to be served. This arrival time allows for unpacking, mise en place, and any last-minute prep without your kitchen turning into a pressure cooker while your guests are arriving.
During the evening
While you're welcoming guests and enjoying drinks, your chef is in the kitchen preparing courses to time. They work quietly and efficiently in the background — the goal is for your kitchen to feel calm, not chaotic.
Courses are plated and served at a pace that suits the rhythm of your evening. If conversation is flowing and you'd like to linger over the main course, your chef will follow your lead.
After the meal
Once the final course is served, your chef clears and cleans the kitchen before leaving. A clean kitchen at the end of the night is a standard part of the service — you shouldn't be left with an hour of washing up after your guests have gone home.
5. What You Need to Provide
In most cases, very little. Your chef will use your kitchen, hob, oven and standard cookware. If the menu requires any specialist equipment — a sous vide circulator, for example — they'll let you know in advance, and in most cases can bring their own.
You'll need to ensure there's adequate fridge space for ingredients and prep, and that the kitchen is reasonably clear before your chef arrives. Beyond that, the evening is yours.
